Maruzen
Food Industry (Australia) Pty Ltd was formed in 1990 as a joint venture
between Agri-Marketing International (Aust) Pty Ltd and Maruzen Shokuhin
Kogyo Co Ltd of Japan. It was established to manufacture high qualitv
natural stocks for soups and sauces, drawing on the technology developed
bv the Japanese partners over of period of forty years, and utilising
the fresh raw materials available in Australia.
A purpose built factory was commissioned in Melbourne in 1991, and
now produces a range of stocks including veal (Fonds De Veau), beef
(Fonds Brun), chicken and vegetable. All products are made from traditional
recipes, using extended simmering at low temperatures and allow for
natural reduction.
There
are no added flavourings, colourings or preservatives and the final
product is packaged in liquid form and then frozen. The process includes
rapid chilling after reduction, which pasteurizes the product and ensures
both its long refrigerated life and that it meets very stringent bacterial
standards. Maruzen can modify their formulas to suit individual markets,
and can package to various sizes, either in vacuum bags or plastic pails
to suit particular requirements. The product is normally prepared at
a medium density, allowing individual chefs complete versatility, it
can be diluted to make a base for a fine consomme, or it can be further
naturally reduced to achieve a thick sauce, or alternatively a little
roux added.
Chefs can retain their individuality by adding their own ingredients,
some fresh herbs and a little white wine to the veal stock to serve
with poultry or veal, red wine, or even cognac to compliment red meat
dishes. The variations are unlimited.
Maruzen stocks are exported throughout the world, and have achieved
strong acceptance in Asian countries, particularly Japan, a market which
demands the highest quality, product consistency and reliability of
supply. The veal based stocks, especially Fonds De Veau, have proven
to be the products most in demand, as they can be used as a base for
veal, beef, poultry or game dishes as well as a wide range of consommes.
Maruzen stocks are being used worldwide by airlines, hotels, restaurants
and caterers.
