Joseph Vargetto began his career as an apprentice at Florentino's restaurant in Melbourne , before heading to Italy where he learned from the legendary Gaultiero Marchesi at his three-star Michelin restaurant, Laberata.
When he returned to Melbourne , Joseph worked as sous chef at Langton's before moving to The Venetian as head chef for two years.
In December 2002 Joseph joined Number 8 restaurant and wine bar, where his classical technique married with modern flair has been warmly received by Melbourne 's diners.
