Original from Hong Kong Ki Wah Lau began his career in 1972 as an apprentice
at the Nathan Hotel in Hong Kong.Form there Ki Wah Lau honed his skills at a
number of restaurants within the Food Street Group (Maxim's Restaurant Group)
in Hong Kong. In 1987 Ki wah Lau immigrated to Australia and gained a position
in Crystal Restaurant in Melbourne, moving in 1988 to the Mask Of China.
Ki Wah Lau was employed as a Sous chef in Silks in 1997 where his outstanding
culinary skills were instantly recognised gaining a promotion to Chef de Cuisine
within 6 months.
